3-4 chicken breasts or tenderloin
1/2 bottle bbq sauce
1 small jar apricot pinapple jam
2 T. soy sauce
cornstarch or flour
1.Dip chicken in beaten egg.
2. Flour & layer chicken in a sprayed 9x13 pan.
3. Mix bbq sauce, jam & soy sauce together and pour over chicken. Add more sauce if you need to. I usually taste mine and add more jam because I like it a little sweeter.
4. Bake at 375* for 30 minutes or until chicken is fully cooked.
4. Serve over white or brown rice.
Any recipe that I can make for dinner in under an hour is a winner in my book! Hope you enjoy it! :)
