Peppermint Bark Recipe


There is a funny story behind how I found this recipe. I've been wanting to make Peppermint bark forever but I thought it would be really hard to make.  I went to the dentist, a week after my daughter was born, to have some work done. I still remember sitting in the waiting room, a little nervous to be away from my new baby girl, and nervous about how I would care for two kids now. I picked up the People magazine and saw a familiar face. I love Bethenny Frankel from Real Housewives! (Thats a whole different post though haha). Her recipe for Peppermint bark was in it and I had to try it. 
So I found this recipe while at the dentist..kind of funny! 


Peppermint Bark

Ingredients:
1 (11 oz) bag of white chocolate chips
1 bag dark or milk chocolate 
2 handfuls crushed candy canes or peppermint candy
1 tsp Mint Extract
1 tsp olive oil

Directions:
1. In microwave (or double boiler), place white chocolate chips and 1/2 tsp olive oil into bowl. Melt for 30 second intervals, mixing in between. Chocolate will melt from the heat of the bowl as well so be sure not leave in microwave too long. Add crushed peppermint and mint extract.
2. Pour onto wax paper on a cookie sheet. Spread evenly and let harden in Refrigerator. 
3. Melt dark or milk chocolate (your preference) and spread evenly onto white chocolate mixture. Let harden in fridge. 
4. Break into pieces and store in Refrigerator.  



The perfect treat for neighbor gifts or to take to a party!
