Mint and chocolate are one of my favorite combinations. My kids and I recently made these chocolate chip cookie bars and I added some Andes Mint chocolate to them. They turned out so yummy! I had to share :)
Mint Chocolate Chip Bars
1/4 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 1/2 cups chocolate chips
2 cups andes mint chocolate pieces
1. Preheat oven to 375. Beat butter and shortening in a large mixing bowl for 30 seconds.
Add brown sugar, granulated sugar, baking soda, and salt. Beat until mixture is combined.
2. Beat in eggs and vanilla. Beat in as much flour as you can. Stir remaining flour and add chocolate chips. Add 1 cup andes mint pieces.
3. Press dough into an ungreased baking pan. Sprinkles one cup (or more) on top of dough.
4. Bake for 15-20 minutes or until golden brown.
Makes 48 bars.
These bars would make a great dessert for St. Patrick's Day!
