Oven Roasted Parmesan Potatoes

I like simple recipes. Life gets crazy somedays and its nice to have a few recipes that I can make in under an hour. This is one of our favorites!  My dad made these potatoes when we visited a few years ago and I have been making them ever since!


We don't have potatoes often but sometimes you don't want them baked or mashed, and this recipe just hits the spot!

Oven Roasted Parmesan Potatoes
Ingredients:
8 red potatoes
1 Tbs olive oil
sea salt
parmesan cheese

1. Preheat your oven to 400*. Wash and scrub your potatoes, leaving the skin on. Cut into cubes.
2. Place potatoes in a 9x13 pan (or oven safe pan) and drizzle with olive oil. Sprinkle sea salt and cheese onto potatoes and stir in pan. You can add garlic or spices as well.
3. Put cheese onto potatoes and place in oven. Bake for 30 minutes or until potatoes are cooked.
4. Sprinkle a little more cheese on top of potatoes and put into oven until melted.

Yum!!


Very simple! I like making this when we have chicken or pork chops. Add a veggie and your meal is done! Also a great side-dish for a party or bbq.
