I'm a big soup fan. And now that its fall, its soup time! I've tried a lot of soups over the last few years and I recently combined my favorites (with some tweaks and changes) to make it just right.
Add any vegetables that you want the vegetables listed below are just my favorites.. carrots, celery, peas, broccoli, any veggies are yummy in this soup. I love it because whatever veggies I have on hand I can add.
1 32 oz. box of chicken broth
1/2 tsp. Basil
1/2 cup carrots
1/4 cup celery
1 cup broccoli
Salt and pepper to taste
2 cups milk
1/2 cup flour
2 cups cheddar cheese
1. Place vegetable, basil and chicken broth into large pot. Cook on medium-high until veggies are cooked.
2. Add broccoli and boil for 5-10 minutes.
3. Whisk milk and flour together until smooth and stir into pot.
4. Simmer and add cheese. Stir until cheese has melted.
Serve with crackers or rolls
