I sure love watermelon season. We buy a watermelon at least once a week and love eating it with our meals or as a snack.
I wanted to find a yummy combination to change it up a bit and I had accidentally bought a ton of shredded coconut. I had this for breakfast one morning and loved it!
I currently am loving the combination of Watermelon and Blueberries but you could add any berries you like as well! The coconut adds the right amount sweetness.
We loved to grill in the summer and fruit is such a nice side dish.
Fresh Watermelon, Blueberry and Coconut Salad
4 cups Watermelon
1 1/2 cup Blueberries
1/2 cup Coconut (more if you would like)
1. In a large bowl, add all fruit. Mix and serve.
