Easy Cheesy Potatoes (Funeral Potatoes)

This is one of my all time favorite recipes! We love this for holidays, cold days, and all through out the year. Its especially a favorite for Christmas time.

They are also known as "Funeral Potatoes" in the lds community. We always called them cheesy potatoes at our house and I don't even think I knew that they were the same as funeral potatoes until I got older! haha!

There are lots of different versions of this recipe but this is my families favorite way to make it.

Cheesy Potatoes
1 (32 oz.) Package Hashbrowns (Thawed)
4 Tbs butter (melted)
1 (10 oz.) can Cream of Chicken Soup
1 cup Sour Cream
2 1/2 cups grated cheddar cheese
salt and pepper
1/4 cup onions (optional)
2 cups cornflakes (optional)

1. Place hash browns in a bowl and mix in melted butter, cream of chicken soup, sour cream and cheese. Add a bit salt and pepper.
3. Place into greased 9x13 pan. (I like to add a little more cheese over the top)
2. Bake at *350 for 45 minutes or until potatoes are cooked. 

Enjoy! These potatoes are such a nice side dish and we love having it with our Christmas meal! Ham and potatoes- yum!
